Prespa Beans
The main occupation of the inhabitants of Prespa today is the cultivation of bean to produce kernels. Beans of Prespa are tasty and they are considered among the best in the world.
Intensive Bean Production exclusively irrigated, has relatively high economic returns and launched before 1985. The Flat beans, Elephant beans and Giants beans of Prespa is the basic ingredient of the famous traditional Greek recipe, the bean soup. In the local cuisine there are many recipes for beans that are baked in the oven (tava or baked) or made salad. It is undoubtedly very healthy and nutritious food and is a key part of the Mediterranean diet. Elephant beans and giants are the same Greek variety of excellent quality beans.
The differentiation of the two categories is based on their size and their amazing quality due to the combination of microclimate and soil composition of the region. In 1994, the Elephant beans and Giants beans of Prespa recognized as a Protected Designation of Origin. The relevant European Union committee acknowledged them as a Protected Geographical Indication.
The bean growers in the region have created agricultural cooperative in order to ensure the uniqueness of the product and its certification. They have started growing with supervising agronomists and production integrated management product stage. The packing bean recently constructed in a neck-term project for Prespa, and enables bean growers organized to promote the unique quality Prespa beans.
